Pilton Infants School had a guest judge this morning - The Wright Property's Adam Yeo, tasting the talents of the school's annual cake competition. Checking thoroughly for soggy bottoms and moist fancies, Property Negotiator Adam put the baked treats to the test, in a tough taste-off that tickled his tastebuds to titilation. Eventually declaring Rachel Beaman's wonderful circus animal-inspired invention the winner, Adam has given his tongue the rest of the month off.
"Generally, I'm cutting down on my sugar and butter intake, but these efforts were worth breaking my fast for!"
The Pilton Infants' Annual Summer Fete, sponsored by The Wright Property, takes place this Saturday 4th July. We will be on hand to deliver 1st prize to winner Rachel.
Have you ever preheated an oven to 180C/fan 160C; greased and lined two sandwich tins with baking parchment; creamed butter and sugar together in a large bowl until pale and fluffy; beat in the eggs in a few additions until the mixture is thick and voluminous; gently folded in the flour using large metal spoon, worked in a gentle figure of 8 motion to preserve all the air you've whisked in and kept going until no dry lumps of flour remain; divided between the two tins and baked for 25-30 mins (for an 8" sponge) until the sponges rose, golden and felt springy to the touch, left to cool in the tins for a few minutes, then released by running a knife around the edge; placed on a wire rack to cool completely; peeled off the baking parchment and then sandwiched with your cream, buttercream or your favourite jam?
